Is this historically accurate? I imagine not. What was the ethnic dynamic like among outlaws at that time? Were gangs also segregated?

The closes is that there would sometimes be mixed race cattle rustling gangs, but these would have all been white, hispanic, indian, or black men, not women. One of the most famous gangs, The James Younger Gang, was literally just a Confederate guerilla militia that simply continued raiding after the end of the war. They had a policy of not robbing confederate veterans and theres a story of Jesse James giving a man back his wallet after finding out he served in the Confederate Army.
