Squares are easy to measure and the chinks I believe thought the world is square too.
Grids are easy to plan and regulate at the top level, and are easy to navigate for people living in the city. All modern cities are built on a grid for this reason.

Back then it was more theory than practice and the cities just did their own thing.The big granddaddy that really made the style popular was Chang'an. It was genuinely made in that style, aligned to the north, etc. and made enough of an impression on envoys from Korea, Japan and elsewhere, that anyone who tried to make their own capital also followed those same guidelines as best as they could.

As far as an efficiently functioning society and economy goes, a large rectangular grid is about as ideal as it gets.
