A few things.
They believe the world is sort of like a legalistic simulation where their every move is tracked. So they might spend 1000$ on a religious ritual that seems totally non-sensical to the non-religious, but they believe they get blessed for it, so the money spent is returned to them many times over, and it is actually everyone who is being foolish by missing out on this free "karma hack" of the simulation.
Multiply that line of thinking by every other strange rule and ritual they do.

As an example, try shutting off your lights and electricity and stay inside your house studying Torah every Shabbat - and see if you life changes in positive ways.
Each mitzvah has its own reward, but its not always obvious what the reward might be.
For one thing the darkness on Shabbat can lead to a deep feeling of rest and gives better sleep as the melatonin production resets for the day - but there are many deeper spiritual reasons for the design of the entire day. Destroying angels are set out on Shabbat, so all work on Shabbat is cursed. Many Jews might notice if they do financial research on Shabbat, that their financial research for the entire week is destroyed, but if they study Torah on Shabbat, especially the books known to have financial blessings, then the entire week is blessed with miraculous success they could never have achieved on their own.
There is also a flow of divine energies, of Keter and Binah, into the world on Shabbat, so that the entire week is nourished based on the activities of Shabbat. Many people spent their Saturday getting drunk, which cuts off the flow of divine energy. Some of the benefits of Shabbat are specifically mentioned by the prophets: that the king will dwell in Jerusalem and cause it to prosper - which also has the spiritual meaning of the divine presence is especially accessible on Shabbat.
There's entire books of commentary written on things like this - so the rules are seen as very meaningful.

Hence why Jesus Christ has a rainbow around his throne in heaven that glows like an emerald. It's the same kind of bullshit argument as redefining an entire city as being part of the "private domain" so you can perform the same action that would normally be considered a burden/labor and somehow not break the sabbath. The spirit of the law is: don't carry stuff from the inside of your house to the outside or vice versa, because that's too close to labor and you're not supposed to work on sabbath.

Otherwise you might end up technically following the law, but you are not fulfilling the purpose of the law, or you are even actively working against the purpose of the law.

Maybe the water tastes great, but it's a slow acting poison. You should not drink from it at all. That would be the spirit of the law, but you were only interested in not violating the literal words of the law and end up poisoned, together with everyone else who drinks from the second lake.
Or maybe an extremely rare animal lives in the first lake and you are not supposed to disturb it. In both scenarios digging a pipe and pumping the water to another lake would be going against the purpose of the law, but the crafty pump-operator only cared about the words of the law.

The Sabbath rules aren't even that mysterious. People are not supposed to work. So don't try to find sneaky ways to somehow perform work anyway, or just admit you can't fulfill the law. At least that would be honest and not insult the intelligence of an observer, be it human or divine.

One interpretation of the mindset is that by obeying the letter of the law you get the material reward, but by obeying the spirit of the law you get the spiritual reward. So Jews obey the letter of the law.
