Why do people claim Judaism (and by extension Christianity) are Middle Eastern desert religions, when both Judaism and Christianity as we know them today clearly come from the Hellenistic branch of pre-Talmud Jewish tradition? Judaism as we know it today is more Mediterranean than Middle Eastern

Identity is complex and makes little sense. People just say, think, and do things. It's mostly instinctual. Most of the average everyday people you see while buying groceries know basically nothing of their own history, why they believe what they believe, or what they believe in.

Not quite. Talmudic Judaism is derived from the Pharisee branch of Second Temple Judaism. Those guys were ardent adversaries of the Hellenic influence on Jews. Modern Judaism does have some Hellenic elements (for example, in Kabbalah), but those were adapted during the Middle Ages.

As for Christianity, it seems originally some groups were more Hellenised, some others less so. But the destruction of the Temple, and, perhaps, the Marcion crisis, forced those communities to blend into something more or less uniform, having both Hellenistic and Judaic elements. After that, Christianity would continue to absorb more Hellenic elements: pseudo-Dionysius, Augustine, Thomas Aquinas... The Reformation was, among other things, an attempt to purify Christianity from Hellenic elements. Indeed, Protestants are Christian Wahhabis.
