Obviously there are pitfalls and reasons why they didn't do that but putting Robert on the Iron Throne wasn't the only possible outcome for a successful rebellion.

He had no way of knowing that many years down the line his grandson is going to be a crazy inbreed or that Tyrion is going to shoot him because Tywin cucked him.

If you think about it, history would have been better if Daemon Blackfyre won. Most of the Blackfyre pretenders were pretty mid but none of them were crazy retards.
