There are a shit ton of minorities in China, it's just that there are so many fucking Han people (most of whom were other ethnicities that adapted the identity and intermixed in the past) that no other minority can gain dominance. Sounds like you're thinking of the differences between Northern Han and Southern Han rather than talking about the current minority groups, which are groups like Mongols, Manchus, Uygurs, Tibetans, Koreans, etc. Some are indistinguishable from the Han like the Manchus, others couldn't be more different like the Uygurs.
