Why does post processing always look bad?

I've yet to see a single example of flat art looking better with post processing than without

You're confusing a specific modern style with the concept of post processing itself. Anime has always had heavy post processing, back in your day, it was just done optically with lens filters, multiplane cameras, and physical lighting tricks.

Those are in-camera effects, not post processing, post processing is done POST animation, not during

The old effects are equivalent to a director arranging the set and lights to create the desired result in the camera during shooting, the new effects are like shooting whatever and then adding filters, CGI, VFX etc afterwards

The camera stage is literally post animation. You're just confusing optical compositing with digital compositing. To be clearer, drawing and painting cels is the animation. Putting them under a camera with filters and double exposures is post-processing, they just used film instead of After Effects.
