I just started using a graphic tablet to go from pencil sketches to digital art and I'm getting crazy trying to find a proper tutorial that isn't the usual "colourize an anime girl inked art".

A good thing to do when starting out is to focus on grayscale for a bit. You can see here that there's a lot more extremes in light and dark in the first piece than in yours. It's also not too hard to convert a grayscale painting to color with some layer stuff afterwards.

Other than what the other anon said, your drawing is all mush mess. Repair that the reference has many types of edges (normally categorized as hard, soft, firm, and lost) and how they are used.

So both studies on edged and values are needed.

To elaborate a bit though, they've clearly made use of burn and dodge (basically lightening and darkening the base color) or layers set to do the same, which is why the colors are so shit and wrong.

Yes, if your values are spot on, the colors don't matter at all. They can be completely random and it will still "work".

You can color over your value study but it's better as an exercise to develop your understanding so you choose colors that are the correct value in the first place.
Also in a region of "solid" color the lights and darks are almost never the same base color just lighter or darker, not even taking into account things like reflected light. That's sort of what the other anon meant by gimmicks and laying down your won color, don't just color in a whole area then darken parts of it, lay down a whole new color for the shadows and highlights and whatever.
Value and lighting is extremely important to making good art, lighting gives way to form which is what draws people in and makes it look convincing or real regardless of how stylized it is.
