How do you hit the sweet spot of tackling something that is outside of your comfort zone but not so much that the sheer difficulty is too overwhelming? Should I focus on completing projects first regardless of how simple they are?

Then just do it less ambitious next time. You have to be able to listen to yourself to know what you are capable of and what would be enjoyable to you. If you can do it once then you can do it again until it becomes easier. Then you can do more ambitious things.

Get your ideas by drawing roughly and refining the elements you like. Then compose the scene they will be all in roughly, then carefully construct your final version on the good paper.

i'm a /beg/ who recently learned that the path to improvement is to find a subject matter that you're familiar with, but add on an extra aspect of complexity to make it harder.

for instance, with this project right here, i'm doing the same pixel art i've always done, but at a much higher resolution, and i tried out drawing the same room from three different angles to better understand it. will probably never finish it, but i learned something new.

if i make mistakes then i know thats a visible weakness of mine so i aim to correct it
if i get stuck in the middle of a drawing then its usually something specific like if some drapery looks like shit, so then i study how to make it look not shit and apply it. then i imagine other ways i can apply it, what does it look like if i do this or that
your experiences become reference points that make you better because you know what works and what doesn't. what was once a barrier now becomes an open door because you spent the time knocking it down
