I've been saving a lot of art I like by artists whose style I really like, what's the proper way to copy these drawings so I could learn to draw more like them?

Just draw them. Try to emulate the process the artist used to get to the final drawing and go from there. Try less to copy and more to understand .

Observe the reference for 1-3 minutes, then draw it from memory. Then overlay the reference over your drawing and take note of where you messed up. Make another copy of the drawing but this time, look at the reference as you draw. Repeat the process.

You may also flip the reference upside down, do negative space studies, or silhouette studies.
