Why do East Asians not have a staple rice and beans dish like everyone else? I just learned that about Adzuki beans and it's weird how they don't show up at all in menus at asian restaurants other than when turned into paste and added to a pastry. It's good plant protein.

raw beans are unprocessed, canned beans are processed. how on earth does tofu fit into this. tofu is processed, but something being processed doesn't make it bad.
