A lot of our restaurants still function on the honour system. In "nasi campur" restaurants, food is arranged buffet style and you pick what you want onto your plate. Later, you tell the cashier what you ate and they will tell you how much it costs. There is an element of trust that the customer will tell the truth. On busy days, you can simply walk out and no one will notice but I have never personally encountered anyone not paying.
