i don't think that's entirely true. it may not be eaten in the whole of italy, and it may use different ingredients or be done differently. but it can still be called italian.

however the insistence on doing a dish a certain way is often completely made up not even in the last 80 years but more like the last 10-20 in some cases. with many italians online basically hallucinating that their family always made it that way. it's quite strange.

anyway, it doesn't matter, because the food culture and standards are much higher in italy than america, so the food is better regardless.
