I'm a seasoned mushroom forager.

The general rule of thumb is if it has an annulus and a volva, stay away. There are edible Amanita species but they should be reserved for people who know what they're doing.

Mushroom picking in the Netherlands is generally safe, we don't have that many toxic ones, and the ones that are toxic are usually only mildly so

Completely untrue that they're evolving to get more toxic. And they're really not the most toxic mushroom. They're tied with most other Amanita section phalloideae.
