Hello /int/, I've created a map which details the spiciness (in terms of chiles, not black pepper, radishes, mustards, etc.) of respective cuisines, lighter indicates less spicy with uncolored meaning not spicy, black equaling spiciest (only one region is fully black in case it is difficult to tell). How accurate do you find this? I would appreciate feedback.

>>225037352Its blurry, but Vietnam is significantly lighter than its neighbors here with north and south similar to Tunisia or the Philippines and the center similar to Senegal or South Korea. Obviously Vietnamese food is much milder than it's western neighbors but you guys still use more chiles than almost all of Europe, the middle east, LatAm (bar Mexico), or southern Africa, and there are definitely areas (central region, tribal areas in far NW) that can have relatively spicy food.
>>225037265Idk because I know very little about world cuisine and places in the map with the same color range, but in northeast Brazil we use scented pepper, black pepper, cumin, coriander, amaranth, urucum, bay leaves, onions, leek and garlic too.Some people do use pepper chile sauce in pastries or bbq but it's used like ketchup and not during preparation In Bahia they also commonly use turmeric and crushed red peppers (some people here also add it to bean stews and dishes with sausages), and palm oil too but so does maranhenses. Oregano is often used in anything that involves hot cheese but I think everyone in Brazil does that with coalho, which is a norheastern cheese.

>>225037726Jiangxi and Hunan are generally considered spicier, but I think Sichuan is more known outside of China, similar to how north east Indian cuisine is generally the spiciest in India (and the world) but south India is generally seen as the spicy region of India.
