It’d be a bit hard to achieve at home unless you have the equipment to grind everything yourself, but your best bet would probably be to mix in some beef and/or pork fat into the chicken grind. The main problem with ground chicken is that it’s too lean, and not very flavourful

The other problem that’s more insurmountable is that the best beef burgers are a little rare, or at least medium, while chicken needs to be cooked to well-done to avoid salmonella issues, so it’s pretty much impossible to make something comparable to a beef burger out of ground chicken. Your best bet in that respect might be to make a breaded chicken cutlet, and then putting that into a sandwich. You could also avoid the need to grind another type of fat into the meat, since frying the breading in lard or whatever would add fat another way
