How commonly eaten are organ meats in your country? In America, despite this country's love of meat, organ meats are pretty widely seen as gross, and are typically only eaten by immigrants, old black people, and some hillbillies. I think it's a shame since I personally love the flavor and texture of tripe.

i believe people only eat cattle liver and chicken hearts here
since i'm a pickyfag i never ate any of those
>>
Liver, blood and bone marrow are still very popular at least in some form. Kidney and sweetbreads are a boomer delicatessen
>>
I think it's offal :)
>>
>>225471609
Pretty much only use them on thanksgiving because all turkeys come with giblets.
Usually just mince everything up and mix it into my stuffing.
>>

That's good to hear, I think it's a shame how food cultures have largely been homogenizing with more "unusual" ingredients such as organ meats being shunned by younger generations.

Totally forgot, quality sausage needs to be stuffed into natural colon. Not that folks are hyped to eat a pig's shit chute but it's a signifier of handmade quality or whatnot
>>
>>225471710
when those retards in your country move on from raw milk they'll make a comeback but be gentrified

I can't stand any sort of organ meat by itself. Admittedly I've only ever had liver, gizzard, and heart, but they all had some combination of horrible texture and metallic aftertaste.
Pâté is actually quite nice and completely solves the texture issue, but there's nowhere to get it in the US. The few places that carry pâté here upsell it as a fancy "imported" food. When I was living in Spain I could walk down to the grocery store and buy a jar for like 2 euros. Probably not the highest quality for that price, but it was my first time trying it and I really enjoyed it.

intestines, blood, skin, bones, liver, heart and kidney are pretty common
brain, tongue and testicles uncommon but most have eaten it
ovaries, ears and cheeks are rare, almost no one has eaten any
>>
>>225471758
Those are mostly gen xers though, and they never give a shit about culinary practice since they are just health nuts.
>>

Americans confirmed to be not white.
Nobody cooks offals better than europeans.
>>
>>225471792
I thought Indogs were supposed to be good cooks?
>>
>>225471770
Cheeks are commonly the most tender cut though. Pretty expensive here and it's just regular meat. Not getting the disgust by normies at all
>>
>>225471770
What are some common dishes that utilize those besides the obvious like morcilla and bone broth?
>>
>>225471609
We will make tacos out of all of those except testicle and lungs

Cheeks are so good, there was a Chihuahuense barbacoa place near where I used to live, picrel is a burrito with barbacoa (stewed beef cheek) and chile relleno (fried chile stuffed with cheese).
>>
>>225471812
Our offal recipes suck ass.
You know that spices used excessively to mask disgusting flavor? That is true about our treatment for offals.
>>
>>225471831
I though you guys do eat lungs, no? I know your neighbors to the south in Guatemala eat testicles since there are street vendors nearish to me who sell testicle ceviche,
>>
>>225471920
You know that meme*
>>
>>225471906
Based. Can't suffer in el norte (mejico included)
>>
>>225471920
What do you guys do well then? Mexicans and Chinese are usually pretty good at cooking offal.

We eat liver sausage and paté. Intestines are used for the skin on sausages
You can buy all sorts of organs in supermarkets. French cuisine uses organs a lot
>>
Beef heart is really good

Spice mixes

>What are some common dishes that utilize those besides the obvious
besides morcilla and longaniza there's also gandinga which is a pork offal stew
there's no specific way of preparing the uncommon ones; stewed, fried or grilled it depends on the texture

People eat every last part of cattle including head and hoof meat but im the one who splits the head for my family and seeing the larvae inside them especially the few last years discourages me from eating the brain which i normally love although apparently it's safe as long as you torch the fuck out of the worms
Also i used to eat a fuckton of chicken hearts last year, just sear them in olive oil and snack on them while walking but with all organs your body just tells you to stop at some point since most organs overload you with fat soluble vitamins, same reason eggs get tiresome quickly unless you restrict it to one or two a day
>>
>>225472171
Why are there parasites in your meat
>>
>>225472171
What is the flavor of brain like?
>just sear them in olive oil and snack on them while walking
This sounds quite good
>same reason eggs get tiresome quickly unless you restrict it to one or two a day
Tunisia would like a word.
>>
Very rare it's considered to be dog food.
>>
>>225472229
It's not in the meat, sinuses. They're called sheep bots or whatever i read some papers on it long ago during adha cba to fetch any but it's a begnin condition if the bots themselves dont carry some pathogen and dont get further than the sinuses. Torching them is enough
>>225472252
>Tunisia would like a word
They (and us too, all of north africa eats shakshouka) drown it in tomato sauce and it's not something you have every single day, maybe like 3 times a week
eggs as a main course get tiresome quick
>What is the flavor of brain like?
Creamy buttery scrambled eggs (they pair well too with eggs btw)
>>
>>225472327
Sounds good, any traditional preparations of brains?
>>
>>225472049
How do you prepare it?
>>
>>225473094
Personally I just cook it the same way as a steak, it tastes quite similar with a bit of gamey aftertaste.
>>
>>225473371
What region of the country are you from if you don't mind me asking? I've had elk heart before and it was quite good.

>t. fankui sok bule
>ayam goreng indo kekeringan, ngak kaya bule
>roti indo kemanisan, ngak kaya bule
>ngak ada orang yang beneran suka lapis legit
Jijik banget.
>>
>>225471609
yes

particularly in the south west and in lyon, offal is very popular
>>
>>225473800
What types of offal are commonly eaten and are there any dishes which you enjoy in particular?
>>
>>225471609
very much appreciated, historically
it's all over althoughbeit
>>225471660
bone marrow is so good. This and gizzards are just undeniably really great
>>
>>225471609
Very common. We even solidify blood here. Brains, bone marrow and intestines are my favorite, personally.
>>
>>225473753
I'm from San Francisco, I mostly started eating offal for health benefits.
>>
>>225474333
I've had the congealed blood cubes before in Vietnamese cuisine and thought they were quite good! How do you generally like intestines prepared?
>>
>>225471609
I've eaten everything except lungs and brains as yakitori.
>>
>>225471609
Liver - Muscle meat
the rest I can’t handle eating
>>
>>225471609
idk
i see lamb liver and hearts in my local supermarket, along with chicken. yet not beef. curious.

>>225475030
what about marrow and skin
>>
>>225471609
I eat raw beef liver from time to time.
>>
>>225472049
