It’s an acquired taste but I like the simple mini coastal subs but the type 2 a had way too short range to seriously keep up in a meaningful way. The type 2a/d also have the smallest sonar signature so you can hide with them. All in German too with real flags and stuff.

The grey wolves mod pack is also very well done and literally gives you the game for free but I had stability issues for some reason and didn’t care to diagnose it yet
