I think for pacing reasons maybe. Some of them are like 30 minute standalone short stories, like the one about Soujuurou's mysterious part-time job. Might not have fit that well into the flow of the main story.

As much as I like the way Tsukihime is written, I'm very happy it's a visual novel and the adaptation sucks anyway because because it's very hard to take Shiki seriously when you actually look at him. He works really well as a kind of Poe/Lovecraft protagonist but he doesn't have the appearance to match so seeing pretty boy whiney edgy fucko just throws all the delerium/paranoia/insanity he's good at depicting out of the window. At least very little of that matters in Melty. But still, have him look like a fuckin' weirdo, it's fine, it'd be more charming anyway. Don't have to make him outwardly ugly either, Yukito in AIR accomplished similar (though that wasn't a horror game)

Shiki has "cute" pretty boy eyes instead, so you them you take seriously but Shiki just looks like a fucking joke.
