I passed the exam with N2 TRY + anki + https://nihongokyoshi-net.com/jlpt-grammars/ for final cramming.
But work on your reading speed, because the reading parts are pretty long and you're not gonna make it time-wise if you don't have enough reading practice. Read some light novels for that

This may improve your reading speed but JLPT tests don't have a light novel register at all. You can skim a VN or LN but when you need to parse a factual text things are fairly different.

The higher the N level, the longer the reading comp exercises are. Some people say they only read LNs and passed N2-N1 or whatever, but I'd suggest getting used to understanding other kinds of text as well. The best practice for this are news, short essays or Wiki articles. Or, well, the mock exams materials with specific reading exercises.
If you can increase your reading speed while maintaining good reading comp then you're golden.

Well yeah, I'm specifically referring to reading speed there. There is no doubt that the content you mentioned is closer to what I had on the N2 test, it's just that I wouldn't be able to force myself to read news articles for an hour every day. Though I obviously had some exposure to those materials too.

I really don't think that's a good way. You need to train to understand the confusing hard parts and not just look at the translation at the slightest moment of doubt. For N2 you need to practice reading big fucking walls of text without any translation, dictionaries or tools.

Search whatever books you've already read, estimate their difficulty rating. That would be your baseline difficulty level.
Filter novels or light novels from that level and find new ones by rating/popuarity, by whatever looks interesting (covers, tags, etc) or by searching other books by familiar authors. The ratings are not 100% accurate, but it's one way to go about it. There's also Jiten with an algorithmic approach.
Also important is what kind of book it is and its setting, in terms of the grammar/vocab you're trying to learn. Novels, esp. 純文学, tend to have prose you don't see in light novels; similarly, stories set in an office, art school or crime novels will have vocab and grammar a book set in a high school may not have.

Pick something, pirate it, try reading it and if you're not feeling it after 10-20%, drop it and find pick another book. Life's too short to be spent on boring books.

I like to read a few books in a row from a level I'm comfortable in (around 12k char/h) then I'll increase the difficulty by 2-3 levels because you don't want to stay too long in your comfort zone, then go back to a more comfortable level, and repeat.

Most of those have English TLs (often official ones) to read side by side, but I would advice against it. If you feel like you know the words but can't make sense out of a sentence it's probably because: a) your grammar is weak, b) you lack exposure to how certain words are used, c) you're skim reading.

Do grammar reviews, break down the sentence, re-read and put your brain to work.
