The other characters are actually pretty true to canon for their depiction in the game for the most part. So it's even more funny that they kind of dropped the ball for the character that would be the main character. I can't help but feel like they needed a more typical heroic goody-two-shoes MC to act as a vehicle for the player and that's why they made Mystia this way. And that's perfectly understandable.
But I still feel like a restaurant game where Mystia is still kind of a hellraiser would've worked. She's way too meek and nice in this game.

Touhou is essentially Sesame Street, but everyone are kind of dicks to each other. It's not necessarily wholesale edgy and grimdark, but there are relatively few conventionally genuinely nice characters in Gensokyo. A lot of fan derivative works actually tend to make out some 2hus to be nicer than they really are.

I doubt it. Hecatia never shows fear of anyone and expresses clear reasons for her dislike of the moonies.
She and Junko had them pretty clearly in check and the Lunarians only avoided mate because they outright refused to make a move until a new piece arrived from outside the board, which even then only convinced Junko too yield her current scheme. Outright defeat doesn't seem to have ever been in the cards and as per Eirin, they only ever combat her by exhausting her rage instead of actually fighting her or seeking more permanent solutions, despite clearly not having any moral qualms about those.
It stands to reason that their tricks simply don't work on anyone significantly more powerful than them.
