Probably Kali/Eskrima. Seems like an inefficient thing to spend your time on, though. Even an untrained person can defend themselves with a knife if, the other person doesn't have a knife, and getting in a knife vs knife fight is just a bad idea no matter how much training you have. You do own a gun, don't you OP? Better off just spending your time and money at the range.

The most common answers you'll get from this question is kali/escrima, but whenever an MMA gym brings trainers and people start having mock knife fights, all those escrima techniques go out the window, and it usually becomes a grapple. Do some striking (boxing, karate, muay thai, etc.) to learn some proper footwork and movements and to learn how to strike (stab) and then learn some grappling (judo, jiu jutsu) so that if you meet a grappler, you're not helpless against him.

The thing about a knife is that people tend to run away when you pull it out, so then you're chasing the guy down with a knife and jumping on him, stabbing, dragging each other to the ground, biting ears and fingers off, y'know it just looks bad, not good optics for a self-defense case. It's also a lot more work.
The vast majority of your "self defense" comes from going to the gym and getting big. That's enough to stop most confrontations from even starting, which is the ideal situation.

HEMA is not a single organisation, and as such maintains no specific standards for such. As for any specific HEMA organisation... quite a few of those have no specific grading system or titles at all either.
What you posted is a bit of late 16th century advertising (well, except that he didn't think you had to beat another master to necessarily be one yourself, since someone has to win even in a match between two true masters), where one fencing master tried to shit talk the fencing schools he was loosing business to. Now the standards he suggests may not be entirely nonsensical, but it's hardly something to be taken as absolute and eternal truth either.

Why would you not carry all three? There will always be circumstances where one of those self-defense tools would be more apropos than the other two (even if it's just a loose shitbull). /kg/ is full of /out/ists who only want to talk about bushcraft and splitting wood on the weapons board, and think the GOAT "defensive" knife is the Fairbairn-Sykes (even though it was designed as an offensive military sneak attack sentry removal knife). The actual GOAT EDC fixed blade knife is the Bowie, which is what Southern ruffians and frontiersmen carried in the antebellum period, culminating in the famous oversized Confederate D-guard "yankee gitter" Bowies. The Bowie knife was a large butcher's knife with a fighting style that consisted of lightning-fast snap cuts and back cuts developed by the various European sabre fencing schools that existed in New Orleans and other cities around the Mississippi Delta region. These large knives gradually started to disappear once repeater firearms and smokeless powder became commonplace, but their smaller descendants became what we would call "combat knives" in the World Wars (KA-BAR, Randall, etc.) , which eventually became "hunting knives" after being further specialized in the post WWII era (Buck 119 and 120).
