Probably easy. The reality is the Nazis had other shit on their plate and couldn't be everywhere at once; especially by 1944. Modern estimates suggest there were nearly 30k jews hiding out in the Netherlands; and around 12k of that figure were in some way caught by the end of the war; so as long as you did what you could to maximize your chances (hide in the country, not in your own factory in one of Amsterdams most fashionable neighbourhoods; exercise sound and light discipline, don't piss off any collaborators who might then betray you for the bounty) you're probably already on the home stretch.
Where do I start? Am I allowed to just boat across the channel or am I confined to the borders of the Netherlands?

Probably counting German vehicles and send the reports to London or whatever. But on the other hand you can't really blame them. Western Euros didn't really have much reason for violent resistance.
