The side by side layout was mostly a consequence of having to have two hammers/whatever firing mechanisms side by side since stacking them was a bitch, if even feasible. Now that you can just have internal strikers pop the rounds off there's really no reason aside from cool (which is always valid) to use a side by side when over under kind of just aims better by default on account of the barrels being on top of each other instead of spread out horizontally.

I'll give you the benefit of the doubt since I've never had the opportunity to swing one around myself, could just be a regional thing, I'm sure there are faster game birds out there.

I also have this 28" Laurona SxS rusted to fuck, I'll beat 90% the world with in skeet or sporting clays, my father beat George Digweed with it, so I might restore it one day but I like the patina but it kicks a bit due to no weight on it. Most SxS are 26-28 inch, 30-32 is much more modern and then the weight is closer but most wont unless they have a pistol grip and larger stock than classic straight English style. This is a spanish 1950's gun that'll still out shoot most people.
