Horses and especially pack ponies greatly extend the operational range of light infantry.
In some terrain it's mules, airdrops or nothing and because one man can lead several ponies that's like a whole units worth of supplies.

The most obvious example of this was Ledo or the VC line through Laos.

Donkeys are really limited, they don't carry enough to warrant training them for warfare or transporting them over long distances. They only got used in Afghanistan when they were sourced locally and even then it was small numbers compared to mules.

household cavalry regiment is an armored reconnaissance regiment since ww2.
they retained horses for ceremonial and guard duty (those guys you see guarding Buckingham palace on horseback are household cav)

though it's nice to see them considering using horses operationally.

Yes, in specific circumstances.
They can be refueled by letting them graze for a few hours, they can access terrain that wheeled vehicles can't and even tracked ones would struggle in, they can carry a soldier in full combat load for long periods without much issue
