What is the bare minimum a normal person should know/be capable of to handle realistic self-defense and emergency situations?

Not asking how to become some operator or professional fighter. I mean the minimum level of competence you'd want for situations you could plausibly encounter:

* Situational awareness, avoidance & de-escalation
* Hand-to-hand combat & physical fitness
* Weapons/firearm safety & active-shooter situations
* Everyday carry, first aid & emergency response
* Self-defense/use-of-force laws

As far as knowledge goes? Wrestling (Greco-Roman or Freestyle, not that WWE shit), specifically maintaining your posture and hand fighting. Being able to stay standing and keep somebody from grabbing you or your gun are essential.
Past that, learning how to throw a punch and scream are also pretty important.

Judo/sambo/wrestling for grappling. You can't go wrong with any of them, and they'll put you better than 90% of the retards looking to start shit at the bar.
Kyokushin Karate, classic boxing, and muay thai for striking.
Good luck with finding a gym that's actually accredited in any of them in your area unless you live near a metropolitan area.
As for a gun, it's whatever feels comfortable when shooting and easily concealed.

You might try an MMA gym or just ask your local high school or community college wrestling coach. BJJ gyms also exist and can teach you a lot of cool shit, but I wouldn't recommend them.
They're more focused on takedowns and technical grappling on the ground, just a complete disregard for getting punched, kicked, stomped, or anything that might occur in a real fight.

Situational awareness is the most important and the easier to forget by distraction. Understanding and using your brain is the most important weapon.
Carry some type of pepper spray and dont let anyone get too close - you need to learn to read body language and street tactics of common criminals.
Carry a concealed knife and if allowed carry a gun as a last ditch defense.

Yes. Manufacturers across the board are cutting costs everywhere they can, and that means doing bare minimum. In regards to most current production revolves, build quality is worse than it used to be, everything's made of pot metal now, nobody inspects them at the factories anymore, and sometimes they're rusted before they even reach a shop.
Old revolvers run the risk of being clapped out, but they were pretty fucking good at point and can be kept or made decent with the right tools and expertise.

Any store that sells self-defensive handguns sells them. They are significantly popular in the category. They have a big more recoil than a semi auto but take less practice time to familiarize yourself with operationally. Point and shoot.

Cardio works for running and fighting, as I mentioned in my answer. Too many "fighters" get gassed out too quickly. If a gunfight ensues, being able to reach cover would help you win it as opposed to huffing and pussing after sprinting for 15 measly steps.

I'll agree that the chances of a fight turning into a ground grapple are lower than BJJ fans claim, but grappling is still valuable to learn to defend yourself from other grapplers. Knowing how to defend yourself from takedowns is nice.

Tbh pulling guard is something that even many BJJ practitioners groan at, it's just that under the rules (match starts standing and, for all intents and purposes, must end on the ground) it's simply good strategy. Some competitions adopt rules to limit it, but you can always game those to an extent

Boxing is harder to find examples of because there's no belt system and everything is purely off competition. Both have a legitimate problem of sandbagging, but BJJs stems a lot from the school's owners'/coaches' egos. So much to the point that dudes have a legit out of body experience after getting thier first stripe.

Trying to train people can be counter productive if that leads them to not seeking support, or getting into conflicts they can't win. Giving your daughter that pepper spray is going to make her think she's got options if a dude just grabs her.

So who gets training? High risk role, high risk environment, lack of support. An in-home care nurse, disability support worker, fire fighter, someone who goes hiking, backpackers, it's quiet a long list.

There's the two minute defence course, how to protect yourself from serious injury in the two minutes it will take help to arrive. Put a gi on someone or you know, a dressing gown, grab the cloth above the shoulders so you can't shovel them with any body weight, just shake them in various directions. Don't go down, avoid getting stomped.

Second training, lie on back, I'm going to hit you with a swimming pool noodle. Can you use your legs to defend yourself while grounded?

Push up, stand up, jumping jack.
Are you able to get up and run away?

If I can grab your shirt and just push you over, you can't get back up, and I can just hit you on the head all day with the pool noodle why are we even here? You'd lose a fight to an inanimate object, more likely to hurt yourself falling over nothing then be assaulted. You need gym. Yoga, try swimming if you're 9000 pounds.

Basic boxing guard, if you're not going to just fall over when hit, can you actually stop a punch? Bend knees as if I was shaking you, guard up, I'm just going to walk into your gloves, can you push me back without falling? I'm grabbing the top of your gloves, how long can you keep them up? This is no aggression, no violence, no impact. Some other tard just walks into you, can you protect yourself from a cheap shot before someone jumps on that tard. Good work.

Ground training, spin around while on your back, pedal the imaginary bicycle. Can you maintain a guard while grounded for 30 seconds?

Mobility, bungee cord run, jumping soft hurdle.

Can you withstand 30 seconds of low intensity assault, someone trying to lie on you, can you run way if someone is holding your shirt?

The random 12 year old boy can probably do all this, you may well be a teacher, your opponent may literally be a 12 year old boy with behavioural issues or a disability. Train people for adversaries they might actually beat.

There's three primary situations where you might have to defend yourself:
1. Some dumbass doing dominance games in a public space. This you can see from a mile away. Think the nigga moment from Boondocks. Someone starts shit with you either because of a perceived slight or because they want to act tough. The first step here is to try de-escalate: If you did something like bump into the guy sincerely apologize, maybe offer to get him a new drink. If you didn't do something but they think you might have, try to evade it anyway, e.g. "what are you looking at?" -> "That's a nice shirt, man. Where did you get it?" / "Why are you looking at my girl?" -> "Is her name Laura? I think I went to high school with her."
"Oh, but if I back down I look like a bitch," "I'm not gonna apologize for something I didn't do," "fuck this guy, I have as much right to be here as he does". If you don't understand why avoiding a fight at literally no cost to you other than looking passive in front of strangers you'll never see again is better than risking injury, death, or getting charged with a felony, you are already beyond hope and deserve to die in a nigga moment.
If they already decided to fight you, there isn't anything you can do to dissuade them. Fortunately, they follow a script: verbal challenge, approach, puffing chest, invading your personal space, progressively shorter phrases as they work themselves up to attack you, and finally a strike. The best way to defend yourself in this case is to skip the escalation ladder and go straight to punching them in the face. Basically what happens is that someone doing that expects you to match them part-by-part: they raise their voice, you raise your voice; they approach, you approach; they poke you on the chest, you slap the hand away; a couple more exchanges and then it gets really physical. If you punch them in the face the moment they cross and imaginary line in front of you, you shut them down immediately.

2. Someone threatens or attacks you for your material possessions.
3. Someone who is on drugs or is mentally ill is attacking you or about to attack you.

In both these cases, the most important initial thing is not to freeze. If you freeze and let them take the offensive, you'll naturally assume the role of prey and cede to them the role of predator. If, instead, you respond with an immediate attack (or counterattack) and continue to press on regardless of how they react, you flip the table on them and short-circuit their ability to do violence to you. In this case, violence is in fact the answer. "Speed, surprise, and violence of action". Attack, attack, attack, until they're running away or on the ground, at which point you can run away yourself. Don't overthink it, don't strategize too much: just keep hitting them with punches and kicks and that conveniently placed brass candlestick that someone left at arms' range until the threat is gone. Don't try anything fancy. Don't go to the ground.
Now, once the threat is down you don't want to go full American History X on them. Yes, it would be extremely satisfying, but then you'll have to use your fighting skills in prison.

Look up Geoff Thompson. He's a black belt in karate or something and has worked as a bouncer for a long time. His ideas of "the fence" and "the three second fighter" are especially useful. He has books and you can find some of his stuff on youtube.
"Meditations on Violence" by Rory Miller is also a good book. Miller has worked as a prison guard and security at a casino, and has plenty of martial arts experience.
Some stuff by Mark MacYoung is good too, if you can put up with his style.

There's big differences between what works in the ring and what works on the streets. I'm not trying to be all "that'll get you killed in da streetz", but rather trying to temper your expectations. If you see a situation develop, just fucking leave before things get hairy. If things do pop off, remember that you can run away and call for help. Don't go to the ground unless you want to get your head kicked in by the other guy you didn't notice. I am NOT saying that wresting/BJJ is useless and I am NOT saying that you shouldn't train them. Being fit and knowing how to apply aggression is great, but don't let the habits you picked up in training for competitions blind you to the realities of actual violence.
