Whats the timeframe? Id destroy the roads and wait, nobody these days has a castle stronghold with months of supplies, so they'll get hungry quick.
douse the top of the mountain with chemicals and wait it to spread downward, repeat for a few week until everything is sterilized and plant a flag on the top
