the alphabet signs are just for spelling out names or clarifying with hearingoids, nobody is spelling out words letter by letter in normal conversation
sign languages are natural languages, they're just as idiosyncratic as spoken ones and convey information at about the same rate
asl actually is more closely related to french sign language than british sign language and none of them are based on the "corresponding" spoken language, the grammars are totally different

Finger spelling is only really used for words that aren't common enough to have their own sign. Like the name of some random person (if it's someone who is talked about frequently, they'd have a sign for that person instead).
They just teach people finger spelling first because it lets new people spell out words they don't know the sign for yet, and because some of the hand shapes involved in finger spelling are used to create normal signs.
