Boyfriend/girlfriend feels juvenile, like you're in middle/high school. Also isn't accommodating to non-binary people.
Partner sounds too generic since it's also used in a non-romantic context such as business partner or dance partner or tennis partner.
Significant other sounds like some kind of legal term that a court would use or something.

Why are there no good ways to refer to the person that you're dating? I think husband/wife/spouse are better options but that requires marriage. Also, why do married people use the term partner when they can use spouse? Spouse is non-gender specific and relays the information that you're married.
