I'd say start with either of these two:
Why There Is No Socialism In America is a solid, short entry point. It engages with a lot of Weberian themes and feels like a natural bridge.
Sombart's work on the Jews is probably the most famous of his (I think) and is a direct response to Max Weber's Protestant Ethic and the Spirit of Capitalism, he builds on his friend's work to say that puritanism was heavily influenced by Jewish elements. This is the most direct follow-up to Weber's work.

After these two Der Bourgeois is probably the next best one to read. It's relatively short and readable. It's a psychological portrait of the capitalist "type".
Luxus und Kapitalismus is quite good and interesting too, it's cultural-economic history with examples from fashion, art, and court life. It agrgues that luxury consumption helped drive capitalist development by creating demand for high-quality goods.
Krieg Und Kapitalismus is good if you're interested in state-military-capitalism links, but not the absolute best standalone starter.
