If you don't like the last paragraph of The Road there is little hope for you.

I will agree that Cormac does have a thing for epilogue-style endings with a radical departure from the earlier events/characters/timeline. If you thought The Road's was bad, I don't know what you'll make of some of the others:

— Big pull-back where he summarizes decades of the MC's life thereafer
(Billy Parham in Cities of the Plain, Bobby Western in The Passenger)

— Bizarre incident involving a new character
(Bind man in Outer Dark, Hole-digger in Blood Meridian)

Even the "normal" endings are a bit weird:
The Orchard Keeper has the thing about the town disappearing
All The Pretty Horses has JGC riding into the mists of nowhere as if becoming some mythical Last Cowboy
The Crossing has the Trinity atomb bomb test although it's not spelled out for you

I guess the nightmare in No Country is normal. And Suttree is pretty normal (except the dog being the death he only just dodged is a bit on-the-nose).

The epilogue of All The Pretty Horses is amazing for the reasons you stated, amazing scene of Grady Cole passing by natives living under oil rigs and going even further into the wilderness. He is not only the last cowboy, but the last native of the wilderness.
Orchard Keeper? Impossible to remember anything that happened in that book.
