Either Ivanhoe or The Worm Ouroboros.
Former is a historical novel (with limited 12th century sources, so Scott brought together materials from different centuries, and invented an artificial form of speech based on Elizabethan and Jacobean drama). Latter is heroic high fantasy that's mostly medieval with traces of Norse sagas.
Both are excellent reading.

Oh, and The Worm Ouroboros is written in Early Modern English (think Shakespeare), since the author read Medieval, Renaissance, and Norse literature.

Ivanhoe has already been mentioned so i'll recommend Conan Doyle's the White Company and its prequel sir Nigel
Some of the best medieval historical fiction ever written
