People who use the word deconstruction usually aren't genre savy enough. Eva is avant-garde but it's themes aren't that bizarre for a mecha series. It doesn't really say much about giant humanoid combat vehicles and their implications which is what a deconstruction would do. You could rewrite the whole thing to be as if Shinji was Ultraman, Kamen Rider or some other shit and keep most of the plot the same.
