The three pouches with nozzles are designed to be plugged into a socket on the machine and rehydrated.I think they use something similar on the ISS these days. The US and Russian space programs still independently provide food made to their own standards, though everything's marked in both Russian and English.Russian stuff still uses a lot more tins while US food is all pouches, which is curious. Every gram you can save going to space is worth saving.

It's actually considered better from a food and texture perspective than what is currently available on the ISS because it preserved texture and style better than the pouch-based reheat torts that the US and EU programs use. For every gram of weight you don't just need the fuel to get that gram of weight into orbit, you need the fuel to get the fuel to get the gram of weight into orbit into orbit. And you need the fuel for that fuel to get into orbit. And so on. Right now that fundamental problem is what has the entirety of spaceflight by the balls. Every single weight saving you can make adds up and is worth it. If that means your orbital restaurant's reviews drop half a star, so be it.Skylab is a very unique case. Skylab got to play with the offcuts of the Apollo program. That meant a spare fucking Saturn V to get it into orbit, which is why it was visibly bigger than a conventional ISS module is today. That meant getting crews up with Saturn IBs too, basically the upper two stages of a V. They were overkill, so weight was somewhat less of a concern than usual. You'd never build assets like that for the job they were used for. Skylab was also a more primitive station. Worse amenities, less entertainment, less communication with Earth, much lower overall volume of space to explore. The food had to play a proportionately bigger role in keeping up crew morale. Shorter missions than ISS habitation too, so less food per person needed.Also consider that the food tech isn't stagnant, it's still been improving anyway.

The people that can meet those utility requirements and the fitness and health needs of the role, and want to be astronauts instead of buying themselves in their fields or making tons of money, are few and far between. The ISS started going up in the late 90's and a lot of it dates to earlier programs that both the US and Soviet Union had for larger stations in the 80's. So depending on where you count from the backbone of the thing has between a 20 and 30 year advantage, plus they get to learn from all the experience of the ISS.I'd imagine it's a combination of newer equipment they're less concerned about, maybe experience dictating prior concerns were a little overblown and absolutely having a very, very constrained list of approved recipes. Could also be a little arrogance as a much less experienced program that's been able to catch up relatively quickly too.
