Because this is what we are used to and they look Great. This has been a thing since the '90s VN games on the PC 88 and PC 98. We love these big fat detailed sprites that take up half the screen.

Several VNs tried using 3d models with more complex animation than just standing portraits, but not fully animated anime, and those VNs didn't get sales boost, so you barely see newer games trying that hybrid approach.
