First of all yes I do know they're there for cool design and function but aren't they a bigger weak point?
Like shouldn't the graze of a beam laser or a missing bullet hit a tank and chain reaction into the pilots death?

You're not supposed to show your back to the enemy so the chance of being hit there is slim.
If you really wanna act like a nerd and poke at "weak spots" ask about suits with exposed missiles at the front like Zssa

Rarely an issue, they normally eject those. those once they reach the combat zone.

just like the tanks mounted on real life fighters and ground vehicles, they're not openly connected to the engines. engines only run off the internal fuel tank, and the external fuel tanks only refill the internal fuel tank with a shutoff valve. the operator has to hit a switch to allow the fuel to move from one tank to another.

that means the pilot can choose when to move fuel from the outside tanks to the inside tank, usually when it's safe to do so. at worst, that means when fuel tanks get shot, it results in a bright flash but no chain reaction since by default the valves are closed.

sometimes the external fuel tanks just feed rocket engines mounted on the external tank itself, which mean they're completely isolated from the internal fuel and rocket engine of the MS, which is the safest design.

Depends on the explosive. IIRC C4 is stable enough to everything but a proper detonator that you can shoot it and you just have a block of plastique with a bullet in it.

Them being external means they're easier to jettison and your mech doesn't have that same fuel tank sitting as a bomb under the pilots seat.

Unicorn Full Armor's fuel tanks are actually the modular tanks from a type 94 base jabber, attaching to the Unicorn's back with a claw-like mounting bracket. These wouldn't feed the Unicorn's own engines since they have their own rockets on the very end and it doesn't look like the claw has a hose or pipe to hook up.
