I'm assuming you've already seen a few of the really high profile mech shows that escaped /m/ fandom like Evangelion and Gurren Lagann, and are just looking to experience more.

Really the best place to start really getting in to mecha proper is Gundam. It's the biggest tentpole franchise that always has something coming out.

Gundam has multiple timelines. The big one is the Universal Century, or UC for short. When you think of "a gundam" you're likely thinking of the main suit from the first show, Mobile Suit Gundam. I do recommend starting with the UC, mostly because all of the alternate time lines call back to and riff off of the UC. A lot of non-gundam mech shows call back to and riff of early Gundam too.

If you want to read a manga, The Origin is an excellent introduction. It is a manga retelling of the original show, with some extra tidbits thrown in. It's a fantastic read.

If you want to watch anime, The Origin anime serves as a short prequel to the original Gundam and expands on the motivations of major characters and sets up the main conflict.

After that is the original Gundam; you have a choice between the anime and the 3 compilation movies. Unless you are a anime boomer with a lot of patience and love for 70s Japanese animation like me, I'd honestly recommend watching the 3 compilation movies. They clean up and reanimate a lot of scenes, remove a lot of "villain of the week" filler, and remove some of the questionable things forced in by toy execs like the Gundam Hammer. The anime is good it's just dated in many ways.

After that, if you really dig the UC you can check out other shows in that timeline like 08th MS Team, Stardust Memory, War in the Pocket, Zeta, etc. A lot of these have manga too, Zeta also has compilation movies.

Gundam, Patlabor, Getter Robo, Brave series, list goes on. There are a million places to start and people here will tell you all of them are shit because they personally don't like them. Just pick a series and go with it, doesn't matter which one unless there's a timeline that you need to follow. I recommend Gundam 00, self contained, good, and was popular even among "normies" in the late 2000s.

Like there are a bunch of racing Anime, if you're into that. The French also made racing comics and dominate the fighter pilot comic. market.
There's Space Brothers and Planetes if you like hard scifi space stuff, and Moolight Mile/ 2001 Nights if you've slipped in from the classic scifi movie side of things.
Space racing series also exist, such as Classroom Crisis, and Battleship Yamato spawned an infinite number of space fleet operators series, ranging from the cartoony to the realistic in their treatment of the subject.

If you're into guns and powered armour, then the Sonoda/Shirow works will be your jam. Red Eyes is pretty okay too, but this end of the mecha genre kinda bleeds into Special Effects Suits (Kamen Rider&Sentai), psychics and ninja fiction, as stuff like Spriggan and Tiger and Bunny show.

Many modern shows for teenagers just tend to be more focused on "hype" and "aura". The solution is to either find shows that aren't just critically acclaimed battle shonen. You could also move on to seinen works, those are generally made to cater to young adults and on.

If your specifically interested in reading gundam the origin just get the 12 volume hard backs on amazon they’re decent quality, not terrible priced, and look nice as a collection. I enjoyed them but I recommend the OG gundam movie recompilations as a starting point for getting into gundam. Or just any of the AUs those are fine too.

There's people saying do one or the other or do neither, it does not matter. You can look up the differences, they're minor. Other stuff to look at are some non-gundam IPs, like the super robot animes. There's a bunch like getter robo that I liked. Then there's some of the cyberpunk inspired ones like Votoms. I liked Votoms, but I immersed myself in too much of that genre, I knew what was gonna happen before it happened. Votoms is pretty solid though. Patlabor I also felt was like that. Fullmetal Panic was fun for a surprisingly quality detour.
