I think mechs(atleast the ones the chinks have) have a niche but more in the lines of support like logistics and engineer. But we're not gonna be close to votoms like mechs anytime soon.
Hell I think the era of armored vehicles like tanks have reached the end of their era, just like the war horses of old.

I'll bite.
Do you know how heavy engineering vehicles usually are?

If you want actual lifting capability to lift debris(a few tons at the very least), you need a big arm to lift that weight, means all your actuators, be it hydraulics or electric, are big as well. Look at the size of the average excavator at a construction site, those excavator arms are rated to lift(using the lifting eye), depending on the size of the excavator, maybe up to a ton, bigger ones probably a few tons.
And if you're lifting something, you need mass to act as a counterweight so you don't fall over when you lift up a big rock, or you have something that anchors you down, which also adds weight.
Pic related, the Wiesel, airdroppable weapons carrier, weighs about 5 tons at its heaviest.
The bridge spans you speak of that your hypothetical mech can lay? They are a few tons as well. And the thing about the counterweight when lifting is applicable here as well.
All of that means your "engineering mech" will be heavy as fuck.

Good luck airdropping a mech that weighs about the same as a Bradley.

What are you planning to carry with your engineering mech if it can only lift less than 500kg? Even if we ignore armor, the hardware to do REAL heavy lifting will add a lot of weight.

The engineering variant of the Leopard 2 weighs 70 tons similarly to the MBT, and thats with lesser armor and the lack of a turret, gun, and the ammo for said gun.

You just see tons of fpv footage because it's common for them to have cameras on them, it's relatable, new and terrifying. Yes it has absolutely changed troop and light armored mechanized warfare but the prevailing meta for large scale warfare between somewhat matched nations hasn't changed all that much because of drones. Air superiority and artillery is still #1, that's what removes enemies from a the land. Troops and tanks then take and hold that land.

The next asymmetric guerrilla conflict that a western nation enters may end up being radically different because of drones though.

Pretty much this, although I do feel they'd also be capable of some infantry support moves. Those hands can do more than just lift and put things together, after all, so being able to put larger bullets downrange definitely wouldn't hurt.

If you're going to need to move a rock, then there are ways to do so beyond just deadlifting it (like using an additional lever, stakes, or just widening its stance), and even then it's not like you'd just have one lifting it. Such machines are going to be more beneficial as handy-in-a-pinch rather than being a dedicated lifting machine, so you can expediently deploy a team or already have units on-site to lay that bridge and then switch to something else rather than sortieing an AVLB. If we go off Scopedog numbers, then 3, maybe 4, at most could be reasonably airdropped from a C-130 and would be enough to do that job. Probably, it depends on how unwieldy the parts are, but the numbers are there.

Even then, it's not like airdroppable armour is particularly heavy. If they absolutely need such armour, then a dedicated vehicle or two could be dropped alongside them, never mind having reactive-armour or countermeasures like smoke or soft-APS. Also
