Mind if I share a small, inconsequential theory with you moonfriends?
I have a theory that Nightmare Night came to be when a folkloric interpretation of Nightmare Moon was syncretized with an older, pre-diarchal tradition that had Wendigos as its central figure rather than Nightmare Moon.
I think this because:
1. (Assuming Nightmare Night occurs around the same time our Halloween does, mid-to-late autumn) The time of year it takes place in is seemingly arbitrary for a holiday that has Luna as its point of origin. What would make more sense would be if it was either celebrated during the night of the Summer Sun Celebration so that it better parallels the myth; OR during Equestria's winter solstice, the time of year where the night's the longest, which would put it decently close to Hearth's Warming Day. It makes more sense that, like our Halloween, Nightmare Night began as a harvest festival and the reason why it takes place when it does is that it's the time of year immediately prior to winter.
2. Nightmare Moon's role in Nightmare Night itself. Where she serves as a sort of judge/apex predator. Offer her your candy or she eats you.
Unless Nightmare moon just straight-up ate a pony during her rebellion this is a WILD characterization to give her. Much less so for Wendigo. And while they also don't literally eat ponies the blizzards they conjure could be metaphorically described as "swallowing" ponies in the whiteout. That, and the most common time for ponies to disappear would be during winter, when they have the least amount of contact with eachother. Once again, making it easier to circulate stories that they were "eaten" by the wendigo.
The second part of this is the offerings. The harvest, or in the modern days, candy. While nightmare moon craves reverence and offering a portion of your harvest is very reverent it's also very non-descript and rings heavily of appeasement when what nightmare moon wants is probably closer to idolatry. If you want to keep Nightmare Moon pleased why offer food when burning an effigy of Celestia would probably net much better results? It makes more sense if food offerings are a hold-over from an earlier Wendigo tradition. Winter is a natural time for famine and famine is a natural time for conflict. Likely giving Wendigo a very strong cultural connection with hunger like they have in our world. It would make sense to offer them food in that context and the appeasement may even work considering that willfully destroying part of the food supply would only accelerate pony society towards a state of famine/conflict thus inadvertently pleasing them. And unlike Nightmare Moon Wendigo care very little about being seen as ultimately malevolent entities that need to be appeased.

This theory has a lot of strong bones but I'd quibble with some of the specifics. Somethings to note also are that the Nightmare Night we see is specifically in a mostly earth pony village, and that when Luna shows up she's being a good princess so the way she arrived is the way she was making contact with these kinds of villages 1000 years ago.

Nothing really gives the impression that Windigos operate on this level of negotiation. They seem to just keep pushing whenever they're able and retreat when conflict stops. Exacerbating conflict would make the Windigo problem worse, not better. Instead, it might be metaphorical trading relations that became literalized during unification while under Windigo attack. I'd suggest that it was an earth pony harvest festival that was originally about sending food to the other tribes before relations became strained, so something like:
>Pre-Unification
Earth ponies give up part of their harvest to the other tribes, driving away the storms (pegasi) and darkness (unicorns) and probably also protecting themselves from monsters. Could also be an origin for costumes as a way to make differences in tribal appearance less of a shock - if this is the only day that hornheads and birdbrains are in the village, everypony would be less tense if the first thing you notice when looking at a pony is not their race.
>Windigo Attack
Giving up their meager supply of food is part of what literally drives away the Windigos by ending the conflict between tribes. Depending on the role of the sisters during unification, Luna may also have been literally have been the one collecting the harvest.
>Before Nightmare Moon
All three tribes are definitely being ruled by the alicorns at this point. Luna showing up (the skies literally darkening when she does) and then giving up your harvest to her and the skies clearing is most likely something that happened at least once anyway, but there's no reason something extremely similar to modern Nightmare Night couldn't already be happening as a follow through from the above.
It'd be really funny and cute if Nightmare Moon was named after Nightmare Night/was Luna's Nightmare Night costume before it became her evilsona. That feels really in character for the kinds of jokes she makes too.
>After Nightmare Moon
The harvest festival is obviously still going to happen, so there's little reason not to reference a figure that was beloved but is now associated with fear during the spooky celebration. Over 1000 years ponies forget that she was a real pony and not just part of the celebration, which parallels Windigos that are a real thing that most ponies forgot were literally real but they still reference in Hearthswarming.

Second of all. It WOULD be really interesting if Nightmare Moon was conceptualized long before Luna ever became corrupted because it would imply that the alicorn actually gets some say in how their nightmare form manifests.
Hell, it would even give an actual, in-universe explanation for why Daybreaker looks like THAT (Nightmare Moon but on fire.) As her conception is rooted in the fears that Celestia would betray Luna or Twilight in the same way she perceived Luna betraying her. (If we ignore that Daybreaker only ever appeared in STARLIGHT'S nightmare). Whereas an older design like Nightmare Star is based in a different conception Celestia has of herself and her failings.

Celestia and Luna are, first and foremost, the bringers or day and night. The entire day is Celestia's domain, but ask any filly what makes Celestia special? "She raises the sun!" So it's more fitting for them to have ancient personal days on equinoxes than on solstices, to be at the points of moving away from the perfect balance rather than on the apex. It also lets ponies AVOID mixing up their cults with mid-winter Windigo-themed celebrations.

True, but it also doesn't seem like they can be appeased. Settlements that tried it likely got their Darwin awards and that was it.

Before Windigos: four generic agricultural quarter days.
After Windigos: three generic agricultural quarter days, winter taken up by celebrations of unity. (Alternatively, the events of the play weren't the first encounter and winter celebrations were about Windigo as far as history can see; every time ponies ceased to treat this myth seriously, they were attacked and the cycle started anew.)
Two sisters: spring is Celestia's and autumn is Luna's, both mixed up with older agricultural stuff. Winter is still anti-Windigo. Summer is either still generic or vacant.
One sister: summer is the new Celestia's day as she tries to counteract the entirety of cold and death on her own. Old spring celebration is carefully phased out and turned into the purely secular Winter Wrap Up as we know it. Old autumn celebration is left unattended because Celestia couldn't bring herself to do anything about it and slowly morphs into a parody of itself. Winter is, naturally, still winter.
