I think we're conflating "traditional" rap/trap/whatever "beats" and backing tracks with the whole genre of vocal delivery.

Technically rap can go over anything. Lupe Fiasco rapped over a Nero track once.

If people are sick of the traditional backing tracks and wish to switch it up, that can only be a good thing and part of the genre's evolution into the future. What we have is essentially decades old and played out.
