A few good bands pioneer and create a sound for a sub genre, then every other band after just copies the formula. So maybe death metal isn't your thing? Im not big on prog metal but I like Alcest. Amon Amarth are great. That's Viking shit. The Body have a lot of variety and interesting music, they're mostly doom. Nothing stirs is a great song by them. Also Hypocrisy have a few good songs. Warpath and eraser come to mind.
