Do you think some people simply don't have the sauce when it comes to making good songs? If someone really liked music and tried to make it but the songs weren't very good in technicality and songwriting. Does that mean this person doesn't have the sauce

Some people are fools and think they can figure out everything on their own and its certainly possible but it's hard as nails.Learn theory, if you are young go to music school. Or at least be surrounded by friends that know what they are doing.

When you look at successful songwriters you will find they write a LOT of songs and the vast majority are crap. I saw an interview with Desmond Child once and he said he had a hit out of every thousand songs he wrote. Everything an artist does is a masterpiece. "The sauce" is practice and quantity.

If OP were to look into songwriting he/she/it would find that writing a lot is the way that many, many successful writers got good. Another example would be what happened at the Brill Building. Writers would go in and grind away 8 hours a day. Practice. That simple. The idea of innate talent and inspiration is magical thinking. It takes practice. It takes work.
