Just start with the classic to be honest,
Hank Williams 40 Greatest Hits for some 1950s honky tonk, lots of great songs in such a short amount of time, Bowling Green and Other Folk Songs From the Southern Mountains is also great

Outlaw country like the highwaymen are great, Early kris kristofferson albums and those last few johnny cash did with rick ruben are good

More folksy 60s country artists like Townes Van Zandt and Mickey Newbury are great, Looks Like Rain is fantastic, The Fantastic Expedition of Dillard & Clark is also great

Part of me is hesitant when recommending these because they feel so disconnected but there are alot of great modern alt-country albums I think they have more in common with things like indie and slowcore but they do evoke that energy, albums like I Saw A Darkness by bonnie billy is great, Magnolia Electric Co by songs ohia, Mojave 3 maybe,

Sturgill Simpson and Tyler Childers are probably the best in the modern country culture, popular but not exactly the mainstream that you might be thinking of Clowns like Morgan Wallen and whatever
