Metallica weren't nobodies mind you, they were the biggest thrash band in America, and opened for some mainstream acts but like, they weren't that popular.
I remeber seeing them open for Ozzy, it must have been Master of puppets era (or maybe shortly before that album was released) I went with my Sister and her friends who all loved Ozzy, but mainly listened to hair metal. They HATED Metallica. They said it was giving them a heatache lol, they basically left for most of Metallica's set.

That's a very disingenuous framing. He didn't point to nu metal. He was making the point that it's not an integral part of the genre's overall identity, which nu metal's success may have already proven, and that the "guitar solo" stereotype was played out and something new needed to be tried. Kirk says in that clip that even he was disinterested in the traditional guitar solo at that point, and wanted to reinvent it somehow. From Lars's point of view, however, the guitar solo was self-indulgent and distracting in a way that would not serve the album, which is almost certainly correct. St Anger isn't about virtuousity and shredding.

The Band absolutely played well together and were tight. Maybe they have a slight swing that classic rock bands of the 60s/70s tended to have that you're confusing for a lack of tightness, but the parts line up well together and they were able to do it live to a similar, sometimes better in the case of The Last Walz, level of tightness.
