On paper I guess they're more reliable but this isn't like a rim brake vs coaster brake situation where one is obviously only meant for bikes made for children and not any serious cycling unless you want to lose your ability to stop every time you drop a chain when you need to stop the most

All the high end groupsets are disk if your fine using r8000 forever it's fine.

The only valid rim brakes are v-brakes, but even the best Vs are at best on par with midrange cable disks, and not in any way comparable to the good shit
And good mech disks, in turn, are on par with commuter-grade hydraulics like MT200s, while generally being more expensive
But on the other hand, from there the improvements start running into diminishing returns, top end hydraulics are generally not worth it
There is very little reason to not run MT200s on any flat bar bike, and very little reason for Shimano besides extortion to not make equally cheap and cheerful road/gravel brifters based on the same internals
Brakes are a solved issue, there is one right choice, a few mildly suboptimal choices and a whole lot of "this isn't 1997 anymore grandpa" ones

It depends on where you live sadly.
I live in a super bike friendly area, and it rules. I do own a car, but usually I only drive it maybe once per week. Everything else I can do on my bike easily and safely. It's amazing.
