I rode an ebike for the first time today and I hated it. I fell off once when I tried to stop before a curb but accidentally stepped on the pedal just lightly and the bike accelerated, causing me to almost faceplant. Every time I pushed the throttle it felt like the bike was moving ahead fast while my body was still behind, causing me to also nearly fall back.

I just got my motorcycle permit because I want to replace my car with a 150cc scooter. Do scooters feel jerky like ebikes? If so I might have to give up on my dream. I'm kind of bummed.

Scooters are easier to ride but there's delay with the throttle where you have to let the transmission spin up it's still something you have learn.
Maybe try turning down the assist on your e-bike to the lowest level or reducing your implied cadence or just cover the brake when your pedalling off
