why EVs still all look like wannabe gasoline cars? since you dont need an engine, designers could go crazy with designs and sell a ton of cars, so why dont they?

The battery doesn't have to be a single piece, they're all composed out of small cells. Distributing it would be easier than an ICE with a split fuel tank. But placing the batteries in the floor helps to keep the center of gravity down.

They need coolant flowing through them and thermocouples, placing cells willy-nilly wouldn't really cut it. The main reason is what you said, CoG. But because of this, any EV with reasonable range has to be designed around a skateboard frame and the cabin slightly raised.
They have more freedom with the hood and front bumper design, but if they make the hood shorter and the cabin taller it starts looking fucked and probably would mess up aero.

Canoo had some funny ideas around this, but you just can't move the front seat any further forward these days due to crumple zones
So even if the shape wants to remind you of a cab over van the seating position remains in the regular spot
