The cost difference is astronomical.
Stainless steel is about 75 cents a pound for scrap.
Mild steel is about 5 cents

Stainless is also more difficult to form, which wears out stamping dies faster.

In your pic these cars made at the end of their model life cycle before the molds were retired. Forming SS puts heavy wear out stamping molds. So, before the factory switches over to the next model year, they make a few cars made out of SS. If you've ever seen these SS models in person, they have massive gaps, dents, low and high spots.

Why don't cars just use plastic body panels? Most body panels aren't structural and are covered in a fuckload of black plastic anyways. Seems like we should just skip the metal. Airplanes go through a whole checklist inspection of pretty much every single part that can fail or wear out, before AND after every flight. They also don't drive around on salted roads all winter.

He isn't. Mostly off-the-shelf electronics are much cheaper than engineering a mechanical solution to most problems. Electronics don't require any sort of wear testing and generally have much better space constraints, so they can shrink-wrap the car around its base components to save material/engineering time. Wire harnesses are built by machines and easily dropped in when the car is half assembled.
