Not to be a contrarian, but my favorite car movies are ones that aren't actually meant to be "car movies".
The Seven Ups, The French Connection, Violent City, To Live and Die in LA and so on would have to be some of my favorites. A lot of the best ones are going to be older, since even network TV would regularly throw in exciting, "dangerous" car chases that'd likely be replaced with all sorts of complex camera rigs and CGI now.
In something like The French Connection, for instance, during a scene where the main character wrecks into another car and keeps going, it apparently was a random passerby that they ended up paying off, and there were no permits, blocked off streets or anything else that'd have made it looked sanitized and safe throughout the entire chase through New York. When you see passerby looking shocked, that shit was all real.

Well, not full feature length movies, but the BMW Films have a special place in my heart, especially The Hire with the E39 M5, loved it. Used to watch it non stop as a kid when my dad got the DVD set from the stealership.
