im basing this off nothing bc i know nothing but i assume the general nuts and bolts of ev are similar to ice. The difference is you need to be more familiar with electricity to troubleshoot and fix a larger number of components than with ice. so get a multimeter and learn diy electrician shit and you should be fine

All the ECUs are locked or something, and they are connected to outer elements as well like headlights. In older ICE cars with the right DIY setup you can freely access the ECUs and actuators and easily do stuff like proxy alignment.

With modern EVs you can't replace your battery modules easily at home like a hybrid the battery is integrated with the frame
If you want to install massage seats or something there's probably a method to connect wiring to the main battery but it will vary from car to car.

Couple of things at a guess:
1. Duty of care shit for nanny state countries, messing with the battery pack is kind of like stepping into your gas tank using a zippo for light if you don't know what you're doing (you don't know what you're doing)
2. It's such a heavy mass and fire hazard in the event of a crash that they actually do want it all caged up to meet safety regs in the event of a crash
3. Probably at least 20% of unashamedly trying to sell cars as a service, mercedes have been most egregious with this by not even giving you the ability to pop the hood without a bit os specialist knowledge and removing some trim.
